Lemony Orzo with Prawns & Peas
Light, zesty and ideal for warm evenings — ready in 20 mins
Serves 2
Ingredients:
- 150g orzo
- 150g cooked prawns (peeled)
- 100g frozen peas
- Zest and juice of 1 lemon
- 1 garlic clove, finely chopped
- A splash of olive oil
- A handful of chopped parsley or mint
- Optional: chilli flakes or a pinch of sumac for a zingy kick
Method:
- Cook the orzo in salted boiling water according to packet instructions.
- In the last 2 minutes of cooking, add the frozen peas.
- Drain and toss the orzo and peas with olive oil, garlic, lemon zest and juice.
- Add the prawns and warm through gently for 2–3 minutes.
- Season with salt and pepper, and stir through fresh herbs.
- Serve warm or at room temperature with a crisp green salad.
