Lemony Orzo with Prawns & Peas

Light, zesty and ideal for warm evenings — ready in 20 mins
Serves 2

Ingredients:

  • 150g orzo
  • 150g cooked prawns (peeled)
  • 100g frozen peas
  • Zest and juice of 1 lemon
  • 1 garlic clove, finely chopped
  • A splash of olive oil
  • A handful of chopped parsley or mint
  • Optional: chilli flakes or a pinch of sumac for a zingy kick

 

Method:

  1. Cook the orzo in salted boiling water according to packet instructions.
  2. In the last 2 minutes of cooking, add the frozen peas.
  3. Drain and toss the orzo and peas with olive oil, garlic, lemon zest and juice.
  4. Add the prawns and warm through gently for 2–3 minutes.
  5. Season with salt and pepper, and stir through fresh herbs.
  6. Serve warm or at room temperature with a crisp green salad.

🌱 Vegetarian swap:
Looking for a veggie version? Simply swap the prawns for:

  • Crumbled feta or cubes of grilled halloumi
  • Or for a plant-based option, try chickpeas or grilled courgette ribbons
  • Add a sprinkle of toasted pine nuts or pumpkin seeds for texture
