Quick Summery Pudding: Cheat’s Strawberry & Basil Shortcake Pots

Ingredients:
- A handful of fresh strawberries, hulled and halved
- 1 tsp sugar or honey
- A few torn basil leaves (trust me!)
- 4 small shortbread biscuits (or crushed meringue for an Eton Mess twist)
- 4 tbsp Greek yoghurt or mascarpone (or a mix)
- A drizzle of balsamic glaze or elderflower cordial (optional but lush)
Method:
- Mix strawberries with the sugar/honey and basil. Set aside to macerate.
- Lightly crush the shortbread and layer into glasses or bowls.
- Top with yoghurt/mascarpone, then spoon over the juicy strawberries.
- Finish with a drizzle of balsamic glaze or cordial if using.
🍋 You can also swap the strawberries for peaches or nectarines if you fancy a change.
