Sticky Honey & Chilli Chicken Skewers

Sweet, spicy, sticky and packed with flavour, these Sticky Honey & Chilli Chicken Skewers are perfect for summer BBQs, family dinners or easy weekend entertaining. They’re quick to prepare, deliciously caramelised on the grill and pair beautifully with a fresh Lemon & Herb Rice Salad.

 

Prep Time: 20 minutes (or as little as 5 minutes)
Cook Time: 12–15 minutes
Serves: 4

Ingredients

  • 700g chicken thigh fillets, cut into chunks
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 garlic clove, crushed
  • Juice of 1 lime
  • Small drizzle of sesame oil (optional)
  • Skewers (wooden – soak in water for 30 minutes if using)

Method

  1. In a large bowl, mix together the honey, soy sauce, sweet chilli sauce, garlic, lime juice and sesame oil.
  2. Add the chicken chunks and stir until well coated.
  3. Leave to marinate for around 20 minutes if possible (even 5 minutes will add plenty of flavour).
  4. Thread the chicken onto skewers.
  5. Preheat your BBQ or grill to a medium-high heat.
  6. Cook the skewers for 12–15 minutes, turning regularly until the chicken is cooked through, sticky and lightly charred.
  7. Serve hot with your favourite BBQ sides.

Serving Suggestion:
Perfect with flatbreads, rice salad, charred corn or a cooling yoghurt and mint dip.

Top Tip

Keep a little of the marinade aside before adding the raw chicken, then brush it over the skewers during cooking for extra flavour and a glossy finish.
